MUSE 6475 - Foodways, Sustainability, and Environmental Justice 3 s.h.


This course probes the intersections between foodways and critical questions of sustainability and environmental justice. Students examine both historical issues and contemporary trends, analyzing meaningful connections between past and present challenges related to food systems, the environment, and social justice. Course projects involve brainstorming and designing ways for museums to encourage and facilitate sustainable practices. Students will collaborate with local partners to initiate dialogue and build awareness. A-E Only. Offered every other year. Sustainability-focused course.
Prerequisite(s): Permission of the instructor and the director is required for students not enrolled in CGP.
