NUTR 140 - Nutrition I 3 s.h. The chemistry and physiology of nutrition, including digestion and absorption and metabolism of nutrients, nutrient requirements of various ages, food sources and dietary assessment and the role that nutrients play in maintaining health and physical well-being. Introduction to the scientific method including understanding of the methods scientists use to explore human nutrition including observation, hypothesis development, measurement and data collection, experimentation, evolution of evidence and its application for nutrition recommendations.
