ANTH 271 - Anthropology of Food and Nutrition 3 s.h.


This course takes a biocultural approach, looking at food in evolutionary history, human dietary requirements, as well as the symbolic and ideological meanings of food and food choice and the political-economic determinants of food availability. Course areas include: Subsistence, diet and nutrition; Agricultural Intensification and Globalization; Commodification of Food; Ideology of Food Choice; Food Insecurity and Global Food Crises; Under and Overnutrition. A-E only. Offered irregularly.
